Description
This 2018 Shiraz was made from hand-picked fruit sourced out of the esteemed grape growing region of Heathcote in central Victoria.
The fruit was fermented in 100% whole bunch cluster to add further flavour and tannin dimension to complement the brooding, dark berry fruits typical of Shiraz grown in this region.
After extended time on skins post primary fermentation, the wine was pressed off to new (70%) 500L French Oak casks for completion of malolactic fermentation, where the wine remained until bottling in mid-2019.
The resulting wine displays highly perfumed aromatics of red berry, clove and dark chocolate as well as a hint of oak imparted almond meal.
There is substantial fruit concentration on the palate but remains lively and fresh at the same time. Mixed in with the berry profile is a light savoury flavour line of black olive and cured meat, supported by well-balanced acidity. The fine but extensive line of tannin gives the wine a clean, focused, textural element allowing it to be enjoyed as a young food friendly wine, but will also work to keep it in good stead for years to come.
