“Dream Cellar” Limited Release Magnum Rosé 2019
Eschaton (pronounced es-ka-ton) translates to “…a heavenly state normally achieved in the afterlife.”
The Eschaton project is Gray’s latest and most ambitious project to date, curating 12 original paintings as part of an immersive year-long, food, wine, art and music experience. The first piece, ‘Dream Cellar’, features on the label of this wine produced by Mazi Wines.
The pairing with Mazi Wines is, like Eschaton, a combination of Gray’s loves – art and wine.
The 2019 Dream Cellar Magnum Release rosé was made from handpicked Mourvedre and Grenache grapes grown in the heart of McLaren Vale.
The fruit was gently whole bunch pressed to delicately extract the spice driven, savoury juice synonymous with Mourvedre grown in the Vale. The very pale salmon hues are the result of the gentle extraction and minimal skin contact prior to fermentation. Following a cool fermentation to dryness in stainless steel vat, the wine spends several months in new and old French oak casks to impart subtle oak texture and build up palate complexity. The final wine displays a complex layer of stone fruits, gentle hints of blood orange, sage and grapefruit zest underpinned by a fine grip of tannin and driven through the finish by tightly held acidity.
